Chickpea Salad- Chickpeas are a good source of protein which growing kids really need.
Chole or white chickpeas are relished by everyone in our house be it chole bhature, Tikki chole, Hummus or Falafel wrap.
Whenever I boil chickpeas I always think that I will keep some aside for salad but somehow there is none left. This time, I had kept them aside for making falafel but kids insisted on having the salad. Can’t really blame them it is so hot these days that salads are everyone’s first preference.
Kids loved this salad so much that I was not sure there will be enough left for taking photos.
You can add whatever you like to the salad. I have added onions, tomato capsicum, green chilies, and coriander. You can add red and yellow peppers, cucumber, beetroots whatever you like.
The salad is quite filling and yummy. It’s perfect for lunch if you want to skip proper food and have only this salad.
How to make Chickpea Salad
preparation time: 5 minutes
Soaking time: 6-7 hours
cooking time: 20-25 minutes for boiling chickpeas.
Serves 2-4
Ingredients:
1 ½ cup boiled chickpeas
2 medium onions chopped
2 medium tomato chopped (remove the seeds)
1 small capsicum chopped
1 tsp chopped green chilly
1 tbsp chopped fresh coriander leaves
Juice of 1 lemon
Salt to taste (boiled chickpeas already have salt so add accordingly)
1/8 tsp Pepper
1/8 tsp red chilly powder (optional)
¼ tsp chaat masala
Note : you have to wash and soak the chickpeas overnight or at least for 6-7 hours. Boil them with salt in a pressure cooker for 20-25 minutes till soft.
To make chickpea Salad
Mix all the ingredients in a big bowl. Keep in the fridge for 1-2 hours for all the flavors to blend in.
Your chickpea salad is ready. Enjoy with your food or have it as your food

Yumm yummm. I remember having boiled chana chaat when I came to Mumbai for the first time. So chatpat it was. I will try making this now for my evening snack.
