Karonde are still in season. Try this instant Karonde ka achaar. Karonde are not only a rich source of iron but also vitamin C.
We make these two ways. One is this instant karonde ka achaar and second is sweet chutney/lonji.
These go really well with most of Indian food and recipes. Add these to your meals to increase nutritional value and taste of your food.
How to make Karonde Ka Achaar
Preparation time: Less than 5 minutes
cooking time: 2-3 minutes + 3-4 minutes
Ingredients:
250 grams Karonde
4-5 green chillies
2 tbsp mustard oil(or any other oil of your choice)
¼ tsp heeng/ asafetida
½ tsp Saunf/fennel seeds
¼ tsp haldi/ turmeric powder
salt to taste
¼ tsp red chillli powder
½ tsp Coriander powder
To make Karonde Ka Achaar
Wash Karonde properly. Cut them in half vertically and remove the seeds and stems.
Boil karonde in 1 cup of water for 2-3 minutes. This step is optional. My kids do not like too sour Karonde so I boil these in very less water to reduce tartness. This also makes them soft.
Pass the mixture through a sieve to remove Karonde from water.
Note: Do not throw away this water add sugar to it and dilute it with water and you have a delicious healthy drink ready
Heat oil in a pan. Add heeng and saunf to it. When saunf starts to crackle add salt, turmeric powder and roughly chopped green chillies to it.
After cooking for 1 minute add karonde. As Karonde are already boiled we do not have to cook them for long. Add spices and mix properly. Switch off the flame.
You can enjoy these with roti, parantha, Poori etc. Add health to your daily food 🙂
these can be stored in fridge for upto a week easily. Always keep these in glass jars/bowls.
