Vegetable Au Gratin – Hi friends! It’s been such a long time. I am posting a recipe after 2 months. I got very busy with kids half term exams and then Diwali preparations or maybe I was being lazy (my family definitely believes that ;-))Anyway I will try my best to keep on posting recipes more frequently.
Vegetable Au Gratin is the most sought after dish in our house.
It is almost everybody’s favorite. There is a restaurant in Jaipur where we used to go frequently for dinner and the manager used to order Vegetable Au Gratin for our table without even asking us. Can u believe that? Then he would just inform us that gratin has been ordered already. He knew our taste so well.
This is quite a regular dish in winters and with fresh cauliflower available in the market my husband has been asking me to make this for quite some time. I use cauliflower, carrots, and French beans but you can add peas, corn or cabbage as per your taste.
I always add pineapple pieces to vegetable Au Gratin because it gives a slightly sweet taste to the dish. You can add oregano or other spices to the white sauce
How to make Vegetable Au Gratin
Preparation time: 15 minutes
Cooking time: 15 minutes for white sauce+ 30 minutes for baking
Ingredients:
For vegetables:
3 cups diced vegetables ( I have used 1 cauliflower, 15-20 French beans, and 3 carrots)
6-8 rings (1 can) pineapple slices
1 tsp salt
For white sauce:
4 tbsp butter
4 tbsp plain flour( Maida)
salt to taste
¼ tsp pepper
4 cups of milk
For Topping:
200 grams of Processed cheese( I have used 8 Amul Processed cheese cubes because I like my vegetable Au Gratin with lots of cheese. You can reduce the quantity of cheese to make it light.)
1 tsp bread crumbs
1 tbsp butter
To make vegetable au gratin:
For the white sauce, melt butter in a heavy-bottomed saucepan over low heat. Add plain flour and mix thoroughly. Keep stirring for 2 minutes over low heat. It should not turn brown. Add milk slowly and keep stirring over medium heat till the mixture is thick. Switch off the flame and add salt and pepper.
Boil vegetables in water with 1 tsp of salt. Do not over boil the veggies. They should be just tender.
Drain them and let them stand for 5 minutes to drain off excess water. Mix vegetables in prepared white sauce. Cut pineapple into bite-size pieces and add to the white sauce. Try not to get any pineapple syrup in your white sauce otherwise, it will be too sweet and watery. I wash the slices before adding in white sauce. Adjust salt and spices according to your taste.
for Baking
Take a greased baking dish and put the white sauce with vegetables in it.
Cover with grated cheese and then a little bread crumbs. In the end dot with butter and bake for 30 minutes at 180 C. serve hot with toasted bread or Naan sabji as you like.
Your Vegetable Au Gratin is ready.

Hiii…
I tried this recipe….but my white sauce got curdled and all watery from below the cheese layer…can u please explain why it happened???
I really love this preparation…but was not able to make it right…please help!!!

Hello Palash. Curdling can happen because of many reasons. if we cook the sauce on high temperature, or if we add cheese to very hot white sauce. sometimes boiled vegetables ooze out liquid while baking which could also lead to watery sauce. so it is always better to drain them properly before adding. pineapple also if its sour and added to hot white sauce can curdle it. hope this helps

I boil milk, and then add corn flour to thicken it. Once thickened, I add cheese to the milk to make the white sauce more cheesy. That’s how my aunt taught me 🙂 You can use the same amount of cheese, just add half the cheese to the white sauce and half on top.

Hi, can i make this with fresh vegetables ie the vegetables not boiled? Also if I use less butter than will the dish be less tasty? Can you suggest any alternative to butter? Thanks

HI Lamya. Sorry for the late reply. If you do not want to boil vegetables you can steam or microwave them. fresh vegetables can not be used.
YOu can also skip butter and make white sauce without it. Just add plain flour in 1/2 cup cold milk. Boil milk and then add flour mixture to it. Keep on stirring continuously. your white sauce will be ready when milk thickens. add salt and pepper.
