Besan Cheela with Cheese and vegetables stuffing – besan/ chickpea flour/ gram flour cheela is savory lentil pancakes. This makes a yummy nutritious breakfast or snack. It is really easy to make and hardly takes any time to cook. Sometimes when we are looking for light yummy lunch or dinner options then also this comes handy.
You don’t need a lot of oil to cook these Cheelas which makes them a very healthy option.
you can send this Besan Cheela in kids school lunch box also. you can add a variety of veggies in this like corn, red and yellow peppers, carrots. Just go with your kid’s preference. This is a good recipe to feed kids different veggies.
You can add grated veggies to the batter also. I have added lauki/ bottle gourd. this is one vegetable which my kids will not eat any other way. so I hide it in whichever recipe I can like Bhaji, gravies, poori and paratha dough, dal, Chole etc.
To make it more interesting for kids I have used cheese and vegetables stuffing ( always a hit with kids). If you are looking for a Vegan Option you can avoid the cheese stuffing.
we generally make cottage cheese ( Paneer) stuffing for cheela. but kids love this Cheesy variation so this is made as a special treat 😉

To make Besan Cheela with Cheese and Vegetable Stuffing
Keep everything ready before you start cooking as these cook real fast. chop all the vegetables and grate the cheese.
Mix all the ingredients mentioned under for besan cheela and make a batter with the help of water. The batter should not be very thick. it should have a pouring consistency.
Heat the tawa and grease it lightly with oil first. Take a big ladle full of Batter and spread it evenly in a round shape.
Drizzle a little oil on the sides of cheela and let it cook on this side. Cook till its light brown in color and crispy. When done flip it and cook the other side. Drizzle a little more oil along the edges and press lightly with a spatula while cooking( If you are not adding stuffing then take it off the flame once done.)
While this side is cooking spread a thin layer of tomato ketchup on the cooked side. Add chopped veggies, cheese and seasoning on half the cheela. When bottom side is cooked fold it in half and take it off the flame. Cook rest of the cheelas in the same way.
Serve Besan Cheela with cheese and vegetable stuffing hot with green chutney or tomato ketchup and TEA 🙂
