Nutty sweet Potato Cutlet – Sweet potatoes definitely qualify for wonder( read that as super healthy) foods categories. What? you are not convinced. Ok, let’s study a few facts about this amazing vegetable. Sweet potatoes are low in sodium and are a very good source of fiber, complex carbohydrates, proteins, calcium, vitamin B6, vitamin A, vitamin C, and antioxidants to name a few( wow that is an impressive list). Wait, there is more. As sweet potatoes digest slowly we feel satisfied for longer. Hmmm.. means less munching on unhealthy ( but often very tempting) foodstuff later on.
Well, that’s enough to convince me. So let’s make an effort to use incorporate sweet potato more often in our diet. We have been eating boiled sweet potato sprinkled with lemon juice, salt, and black pepper for years. Very healthy and filling. Then there is shallow fried sweet potato and potato chaat ( I am drooling). No, I am not sharing these recipes with you. what I am sharing today is sweet potatoes cutlets loaded with nuts and vegetables and super duper yummy. And I am adding sesame seeds to this recipe to add nutty flavor and nutrition. So enjoy….
How to make sweet potato cutlet:
Preparation time: 20 minutes
Cooking time: 20 minutes
makes: 15 pieces
Ingredients:
2 medium-sized sweet potatoes
2 small potatoes
1 cup finely chopped vegetables of your choice( I have used capsicum, carrots, tomato)
½ cup nuts( cashews, peanuts)
2 green chilies, chopped
salt to taste
½ tsp red chilies
¼ tsp garam masala
chopped fresh coriander leaves
2 tbsp sesame seeds
oil for frying
how to make cutlets
Wash sweet potatoes and potatoes thoroughly and boil. Take care not to boil too much. These should be just soft to touch. Remove their skin and mash. Add vegetables, nuts, spices, and coriander. Add breadcrumbs and mix thoroughly. Shape them in desired shape and roll in sesame seeds and press so that these stick to the surface. Sesame seeds add a special nutty flavor to these cutlets. Deep fry cutlets in hot oil until golden brown.
If you are not in the mood of deep fried food you can shallow fry these cutlets.
Serve hot with ketchup.
Tips
Always drain fried snacks on paper napkins first to remove excess oil.
Do not boil vegetables too much. They should be just tender to touch.
Oil for frying should not be too hot for cutlets to fry evenly.
