Roti Noodles – If your kids are fond of Noodles then this is one dish you must try. Your kids will love it trust me :-)This is as healthy as noodles can get as we have replaced store-bought plain flour maida noodles with healthy Roti/chapatti/parantha.
I have used leftover paratha but this recipe is so good that I will not mind making fresh roti for this instead of boiling noodles.
You can add whatever vegetables you want to add. Brocolli, cabbage, peppers, Corn whatever your kids love. This way kids get to eat their noodles and we do not have to worry about their eating junk.
Who can tell by looking at this bowl of noodles that these are made with our very own healthy roti rather than some store-bought, processed noodles? Just small changes in our kid’s eating habits can make a huge difference in their health.
Kids love to take these in their school lunch box also. and it hardly takes any time to cook. Prepare Roti/Chapati/Parantha the previous day. You can cut the vegetables also in advance other than Onion.
To make Roti Noodles
Slice all the vegetables.
cut thin strips of roti to give it noodle shape.
Heat oil in a pan. Cook onions and garlic for 2-3 minutes in oil.
Add capsicum and carrots and cook for another 2-3 minutes on high heat stirring continuously.
After that add all the sauces, salt, and chili powder and chaat masala.
Add thin roti strips and give it a good mix so that the sauces coat the roti strips properly.
Roti Noodles are ready. Serve hot as an evening snack, breakfast, or even dinner 😉 kids can take these in their school lunch box also.

The very useful recipe made from the leftover, thanks for sharing. Mostly every day I am left with 2 to 3 extra chapatti’s.
