Uttapam Recipe – I love south Indian food for breakfast. Be it Idli, Dosa or these veggie loaded Uttapams and if you have coconut chutney or Sambhar to go with this even better. These are not only healthy but are a treat for the taste buds. Everybody loves these. kids love taking Uttapam and idli in their school lunch box also.

I sometimes chop veggies and add them in the batter and make thick Uttapams but this is the way family loves it. Onions, tomato, green chili, capsicum, and coriander leaves spread on the top layer and then cooked for that look.
I use Idli batter for making Uttapams. I always make extra batter so that kids can enjoy idli, dosa or Uttapam whatever they like. If planning to use it the next day then you can keep the batter in the fridge otherwise keep the batter in the freezer to use after some days.
How to make Uttapam
preparation time: 10 minutes
cooking time: around 15 minutes
makes 5-6 Uttapam ( depends on the size and thickness also)
Ingredients:
2 cups Idli/Dosa Batter ( click on the link to see how I make Idli Batter)
2 onions cut into thin slices/ roundels
1- 2 tomatoes thinly sliced
½ capsicum cut into thin strips
1 green chili seeds removed and chopped
fresh coriander leaves chopped
salt to taste
oil to cook
water
serve with:
Coconut Chutney
Tomato Onion Chutney
Sambhar
To make Uttapam
Combine the batter with a little water and salt. The batter for Uttapam should be slightly thicker than dosa batter.
Heat a flat cast iron or nonstick tava. Sprinkle a little water on the tava. it will sizzle. It means that Tava is ready. Wipe off with a cloth.
spread a little oil on the tava uniformly. Take a ladleful of the batter and put in the center of the tava. Spread it in Circular motion as thick as you want. Spread all the veggies on top and press a little with the help of a spatula.
Drizzle a little oil on uttapam and over the edges and cook on medium flame for 2-3 minutes till base is cooked. If you are making a thick Uttapam you can cover it while cooking to ensure it’s cooked properly.
Flip it over and cook from the other side also. Repeat the same process to make rest of the Uttapams also.
serve HOT with coconut chutney, Sambhar, Tomato Onion Chutney and Tea 🙂
