Suji dhokla | Healthy Vegetarian Snack

Something about festivals and holidays gives us a big excuse to overindulge in sweets and fried foods. So on this holiday, even if you plan on having sweets to your heart’s content, start your day with something healthy.

For the health-conscious, Suji Dhokla or Semolina dhokla is an easy choice. It is a traditional Indian – Gujarati dish. Suji dhokla is a super quick and tasty variation of the traditional dhokla which uses Chickpea Flour (Besan).

As they are very healthy, they have become a staple breakfast dish of all calorie-conscious Indians. These dhoklas made with suji (semolina) are very tasty and light and can be served in breakfast, as an evening snack or as a lunch box snack for kids.

Equipment

Idli steamer

Ingredients

for the batter:

  • 2 cups semolina suji
  • 1 cup sour curd
  • 1 tsp oil
  • ½ tsp Haldi/turmeric powder
  • ¼ tsp red chili powder
  • salt to taste
  • 1 tbsp or 1 sachet Eno fruit salt

for the tempering:

  • 1/2 tsp mustard seeds/rai
  • 2 green chilies
  • 4-5 leaves curry leaves
  • 2 tsp oil
  • 2 tbsp sugar
  • ½ cup of water

for the garnish:

  • chopped coriander leaves

Instructions

prepare the steamer or idli maker

  • Fill it with the required amount of water and switch on the flame.
  • water has to be boiling when we put dhokla in it.
  • Grease the Thali or dhokla stand with little oil.

Make Batter

  • Mix together all the ingredients for the batter, except fruit salt (Eno), using enough water to make a thick batter.
  • Let it stand for 10 minutes.
  • When the water is boiling in the steamer or idli maker, add in fruit salt in the dhokla mix, sprinkle a little water over fruit salt and mix thoroughly.
  • The mixture will rise immediately. Pour the batter in greased thali or dhokla stand and steam for about 12 -15 minutes. Let it stand for 5 minutes. Cut dhokla in half and arrange in a dish.

For the tempering

  • Heat oil in a small pan and add mustard seeds.
  • When mustard seeds start to crackle, add curry leaves and green chilies.
  • Now add sugar and water and let it boil for 2 minutes.
  • Pour this over the steamed Dhoklas.
  • Garnish with coriander leaves and serve hot with tomato ketchup or green chutney.

Notes

You can add chopped or grated vegetables (carrot, cabbage, and peas) to the batter to make the Suji dhokla more nutritious.
The steamer should be hot when you add fruit salt to the batter.

    Can you tell me the proportion of baking powder/baking soda if I want to use instead of ENO. Thanks in advance.

    Hi!

    Looks good! Want to try it for my toddler. Can the mix be made in advance since mornings are always a rush? Also what exactly is sour curd? Just plain yogurt?

      Hello Anuradha.
      Sour curd is regular curd/ yogurt that is a little sour in taste. you can prepare the batter in advance but do not add salt and eno. Adding salt too early will make it too sour and eno has to be added at the last minute. also if you are making batter in advance do not use sour curd use regular curd/ yogurt.

    Hey Nidhi,

    I tried this recipe, but the Dhoklas turned to be a little dry and brittle . Should I add more water to the batter next time or use a fine Rava.
    Please suggest.

      yes I think more water should be added. every steamer also has different timings. so may be it should be steamed for a little less time.

      Devika dhokla turned dry coz u myt hav added excess amount of eno in it.now to avoid ds dryness nxt tym u can add a pinch of baking soda after soaking the semolina batter for 1hr .

      I use regular suji/rava that we get in grocery store that we use to make upma/ halwa etc.

    Very nice recipe, I like your blog and the ripcees, have visited many times but never left a message. Many are similar to what I normally do at home. I just tried the Dhokla this morning and turned out great, a plateful of dhoklas gone in a few minutes and there is demand for making some more later this afternoon.

    wow .. looks dleicious hope my 14m old son also likes 2 eat probably will try today as evening snack whether i can use idli plates 2 steam d batter?

        Wow! Such a quick snack. I was considering it to be a rocket science .

        Since I was failure in dhokla making, I wanted to be very sure about steaming. Just a suggestion, if you could update recipe to first boil water, will help naive like me.

        Thank you, my adult kids wanted more (at 4:30 PM, there were nearly 10/11, I had 1.5 cups sooji ).
        This one is my favourite now
