Potato stir fry is my kid’s new favorite dish. They love having this with roti, in wraps or even with rice. Whenever I am in a hurry to make something for kids then Potato stir fry and paneer stir fry are my top most choices.
These make delicious wraps. You can add some homemade Mayonnaise to the wraps. Nothing can beat homemade wraps health wise or taste wise. My kids love wraps be it these Potato stir fry wrap, paneer wrap or Burritos.
These are perfect for packing in the lunch box too. Watch your kids finish roti after roti with this Potato stir fry.
I used to fry potatoes earlier. Now I either shallow fry them in little olive oil or roast them in tandoor/oven. You can use either method as per your choice.
How to make Potato Stir Fry
Preparation time: 5 minutes
cooking time: 10-15 minutes
Serves 4
Ingredients:
5 medium sized boiled potatoes
2 onions cut into slices
1 capsicum cut into thin slices
1 tomato cut into 8 pieces
1 tsp chopped coriander leaves
olive oil
Salt to taste
¼ tsp red chili powder
¼ tsp chaat masala
¼ tsp chole masala(optional)
To make Potato Stir Fry
Peel potatoes and cut 8 pieces of a potato. You can also cut them into wedges if you like. Heat olive oil in a pan and shallow fry potatoes for 5 minutes. Keep on tossing and turning to ensure even browning on all sides.
Remove potatoes when done and add onions to the oil. Stir fry for 2 minutes.
Add capsicum and stir-fry for another minute.
Add potatoes and tomato to the pan. Sprinkle salt and spices and give it a nice stir. Cover and let it cook for 2-3 minutes. Switch off the flame. Sprinkle coriander leaves and serve hot with roti.
