Baked Potatoes can be served as an appetizer or a side dish with some main dish or even as an evening snack when kids are hungry.
My kids love these potatoes and demand that these be served as a snack rather than with the main meal so that they can enjoy these more.
These are really easy to make and can be made healthier by adding more vegetables to it. Or you can make these more kid-friendly by adding more cheese to the recipe ๐ My kids will eat almost anything if I add Cheese to it. Well, Almost;-)
If you are planning to serve these as an appetizer it is better to choose small potatoes so that guests can pick one piece easily though it will be a little difficult to scoop out from small potatoes.
How to make Baked Potatoes
preparation time: 5 minutes
Baking time: around 10 minutes
makes 5 pieces
Ingredients:
5 large boiled potatoes
1 onion finely chopped
½ capsicum finely chopped
1 tsp green chili chopped
salt to taste
pepper to taste
1 tbsp fresh coriander leaves chopped
1/4 tsp chaat masala
1 cheese cube grated
2 tbsp butter
To make Baked Potatoes
Take 5 large boiled potatoes.
Cut a thick slice from top of the potato.
Scoop out the potato from the middle leaving a thick border on all sides. Remove the skin from potatoes.
Rub butter on the insides and outside of the potato.
Mash the scooped out the potato and mix with onion, green chili, cheese, capsicum, coriander leaves, and chaat masala. Add salt and pepper to taste.
Fill the potatoes with this mixture and brush with butter on top.
Bake at 220-240 C in a preheated oven for 10-15 minutes till it browns on sides and top.
These taste best when served hot ๐

This was the most favored dish of Papaji.
Particularly when he would skip dinner, he used to get potatoes baked, peeled, cut into half, scooped about 15mm in the center and filled with veg/butter and a dash of salt.
