Bean Quesadilla / vegetarian rajma quesadilla – Quesadilla are a favorite food of my kids. well, what is there not to like in quesadilla? ๐ right. and we have been making red kidney bean burrito for a long time. So thought of trying bean burritos because I thought kids would like beans in this too. I was wrong … They loved it ๐
Quesadilla, a Mexican dish, is tortillas filled with cheese, folded in half and then heated or grilled lightly so that the cheese melts. Different kind of fillings is added to make it tastier. I use regular whole wheat roti/chapati to make these quesadillas. I find this a healthier alternative than store bought tortilla. you can use any according to your choice
This bean quesadilla has red kidney beans, corn, onion, tomato, and capsicum filling, all kids favorite.
How to make Bean Quesadilla
preparation time: 5 minutes
cooking time: 10 minutes
makes 4 Bean quesadilla
Ingredients:
4 tortilla/ roti/ chapati
½cup boiled red kidney bean/rajma
1 onion chopped
1 tomato chopped ( remove the seeds)
½ capsicum chopped
½ cup boiled sweet corn
4 tsp cheese spread
4 tbsp grated cheese ( you can increase or decrease cheese according to your preference)
1 tbsp tomato ketchup/ pizza sauce ( optional)
salt and pepper to taste
olive oil for cooking
To make Bean Quesadilla
Add tomato ketchup, salt, pepper, boiled red kidney beans to all the vegetables.
Spread a tsp of cheese spread on tortilla/roti.
Put vegetable mixture on half the tortilla/roti. Spread cheese on it.
Fold the roti in half. Lightly grease a nonstick pan and cook the quesadilla on medium heat till all the cheese is melted. Cook on both sides pressing lightly with a spatula. Roti/ tortilla will turn a little brown on both sides and become crisp.
Look at that melted cheese ๐
you can also grill it in your sandwich maker. Cut bean quesadillas into wedges and Serve hot.
