Vegetable toast – These spicy vegetable Toasts are perfect appetizers for kids parties as these are bite-sized and can be made in any desired fun shapes.
These are also very nutritious as these have lots of veggies. The best part about this recipe is you can make them ahead of time and then heat them in a non-stick pan just before serving. These are my kid’s favorite school lunch box snack.
You can sprinkle cheese and oregano and bake the slices rather than shallow frying to get a healthy bread pizza.
I ate these for the first time at my aunt’s (mausi) house and it was love at first bite. She used to make these with potato stuffing the same as used in parathas (Indian flatbread) and that is how I used to make it for some years.
One day my son was crying for Pizza and I was not in a mood to bake it. So I added all the Pizza toppings to potato mixture and my kids loved it.
Since then I have been experimenting with this recipe always adding some new vegetables to the recipe and results have always been great.

Spicy Vegetable Toast
Equipment
Ingredients
- 4 slices of bread
- 4 medium boiled potatoes
- 1 cup finely chopped vegetables Onion, Capsicum, Tomatoes, etc.
- ½ tsp red chili powder
- ½ tsp chaat masala
- salt to taste
- 2 tbsp finely chopped green chilies and ginger
- 2 tbsp chopped coriander/cilantro leaves
- oil for shallow frying
Instructions
Prepare the filling
- Mash the potatoes.
- Add all the vegetables, spices, green chilies, and coriander to the mashed potatoes.
- You can taste the mixture and adjust spices accordingly.
Assemble the Toast
- Take a bread slice and cut it into the desired shape.
- You can cut it round, rectangular, or square.
- I have cut 4 square pieces out of 1 slice of bread.
- Spread mixture on both sides of the bread.
Cook the Toast
- Heat a non-stick pan or griddle and grease it lightly with oil.
- Cook on both sides till golden brown just like pancakes using a little oil.
- Repeat with all the remaining slices of bread.
- Serve hot with chutney or ketchup.
To make Spicy Vegetable toast

If your child does not like spices you can easily remove chilies from the recipe. It will affect the taste a little but as your kid is not fond of spices it will not affect them. you can add capsicum, corn etc. to make it tastier.

Hi Ravneet. Try protein rich food like dal chilla, dal dhokla,besan dhokla or burritos.Try potato wraps, tikki burger , poha tikki etc. All these food are generally loved by kids in their tiffin.

vegetable mixture will be spread on both sides of bread.
In sandwiches vegetable mixture is in center and bread on both sides. Here bread will be in center and vegetable mixture on both sides.

Liked your dish and it is very similar to one I make it so thought to share with you the same… Instead of potatoes we use Semolina ( sooji in Hindi) , mix semolina with little yogurt and then add the same mixture of capsicum tomatoes green chilli ginger salt. Mix it well and then put it on the bread but just on one side and shallow fry it.

I have used regular cooking oil. With potato mixture on both sides the toast should not be hard. may be your pan was too hot. after putting them on pan for 1 minute turn the flame on medium.
