Greek Salad – Greek salad is really healthy and tempting. If I have to eat so much salad as it is I will not be able to finish even half of it. But I can have this full bowl of greek salad any day anytime and that too happily. It could be because of the dressing added which gives it a Sweet and sour flavor or because of the way this colorful salad looks in the bowl. I don’t know and I am not complaining 🙂
As I do not get all the ingredients like feta cheese and kalamata olives easily where I live I have substituted them with available ingredients. I have used Cottage Cheese in place of Feta Cheese in the greek salad. Sometimes I use processed cheese cubes also in place of feta cheese. In place of Kalamata olives, I have used black olives.
We all want to eat healthy nowadays and incorporating salads, soups and fresh juices and fruits in your diet are the best way to achieve that. And this is the best way to eat lots of salad in summers
How to make Greek salad
preparation time: 5 minutes
No cooking required
Ingredients:
2 cucumbers sliced
3 tomatoes cut into wedges
1 onion sliced
200 grams Cottage cheese/2-3 cheese cubes cut into small pieces (original greek salad uses Feta Cheese)
10-12 black olives ( in place of Kalamata olives)
2 tbsp fresh Coriander leaves
Dressing:
4 tbsp extra virgin olive oil
1 tbsp vinegar
Juice of 1 lemon
½ tsp sugar
Salt and pepper to taste
To make Greek Salad
Make the dressing first. Add all the ingredients for dressing in a large bowl and mix well together.
Add the cucumber, tomatoes, onion, cottage cheese, olives, and coriander leaves. Toss all the ingredients together. Garnish with coriander leaves.
Your salad is ready. This salad is generally served with pita bread.
