Spinach corn toast- breakfast, snack, appetizer, vegetarian, kids lunch box, tiffin ideasSpinach Corn Toast – you can have these in breakfast, as tea time snack, appetizer or you can send these in your kid’s school lunch box. My kids are not a big fan of spinach but they love these toast. The combination of spinach with corn is really amazing and top it up with cheese and you have a kid friendly recipe in your hands.

These are packed with all the goodness of spinach which is high in vitamins, calcium, minerals and Iron. Cheese is there to lure kids in eating spinach toast. if you want to make these healthy you can avoid cheese. Spinach Corn Toasts still taste YUM.

You can make these in sandwich maker also if you want to send these in kids lunch box. This is a win-win recipe. Even my elder son agrees to this 😉

How to make Spinach Corn Toast

preparation time: 5 minutes
cooking time: less than 10 minutes
baking time- 10-12 minutes
makes 12-14 toasts

Ingredients:

12-14 slices of bread
1 tbsp butter
1 tbsp tomato ketchup

3 cups chopped spinach leaves
1/2 cup boiled corn
2 medium sized onions chopped
1 green chili chopped
1 tsp oil

salt and pepper to taste
1/4 tsp oregano
3 cheese cubes grated

Heat oil in a kadhai.

Cook onions and green chili till onions are transparent.

Add spinach and cook for another 5 minutes.

Add corn, salt, pepper, and oregano. mix thoroughly.

Cut bread in the desired shape. Spread a very thin layer of butter and tomato ketchup on bread.

Top up with a generous spread of spinach corn mixture. Spread cheese on it. You can increase or decrease cheese as per your requirement and mood.

Bake in the oven at 180 C for 10- 12 minutes.

If you want to pack these for kids lunch box, spread cheese on bread. spread a tbsp of spinach corn mix on it. Grill in your sandwich maker. Kids will simply love these.

    Won’t it become soggy on packing in the lunch box

      Hi Ramya. Pack them only after cooling down. they will not be very crisp but still good.
