Apple Carrot Cucumber Salad – This is a very light refreshing healthy salad combining summer and winter flavors in one. This can serve as a healthy snack or as a light side dish to your pizza or pasta or meal.

Every bite is so juicy and flavourful and cool. This is the perfect healthy salad for this season when summers are knocking on our doors and winters have still not left. Carrots are still sweet and juicy and cucumbers soothe us. Apples, I can’t sing praises of enough. high in fiber and vitamin-c, good for digestion, good for skin, and for overall health. I love apple in all its avatars. be it juice, sweets, dessert, salads or even eating raw, apples always entice us with its flavor and juice.

This salad combines the flavors perfectly. we can always add nuts to raise its health quotient. you can add walnuts, pine nuts or raisins. They will add more crunch and nutrition to the salad.

To make Apple Carrot Cucumber Salad

First, prepare the dressing. Mix all things listed underdressing in a glass bowl. These quantities are quite flexible and can be changed according to your family’s taste. keep it chilled in the fridge.
Get other ingredients ready for the salad. Peel ( if you want) and thinly slice the Apples. Cut the cucumber into cubes. Cut carrots into matchsticks.
In a large bowl add all the ingredients. add the dressing and toss everything with a light hand. keep it in the fridge for 15 minutes for flavors to blend. serve slightly chilled.

Ingredients

  • 2 apples
  • 2 cucumber
  • 1 carrot
  • 1 tbsp fresh coriander leaves chopped

For dressing

  • juice of 1 lemon
  • 1/2 tbsp honey/ sugar
  • salt and pepper to taste
  • 1 tsp olive oil

Instructions

  • Keep it chilled in the fridge.
