Bread rolls with potato filling are a very popular snack in North India. Potato stuffed Bread rolls are made by soaking bread slices, then filled with spicy potato filling, and then deep-fried in oil. The potato filling is the same as that in samosas and you can add more vegetables like carrots, peas, capsicum according to your taste.
These are really easy to make and can be prepared in advance for deep frying later. I made rolls 1 hour in advance kept them covered and deep-fried them later.
It’s a perfect appetizer for serving your guest’s tea. You can pack it as a picnic snack also. My kids love to take these in their lunch boxes with ketchup. When I was in school one day teachers decided to have a picnic in school and asked the kids to get some snacks from their home. I took these bread rolls and they disappeared so fast that even I did not get a chance to eat them.
How to make Bread rolls with potato filling
Preparation time: 10 minutes
Cooking time: 20-30 minutes
makes 10 Bread rolls
Ingredients:
10 bread slices
4 medium-sized boiled potatoes
1 tsp minced green chilies
1 tsp grated ginger
½ tsp fennel seeds
2 tbsp oil
½ tsp red chili powder
½ tsp garam masala
salt to taste
½ tsp Amchoor( raw mango powder) or chaat masala
chopped nuts( cashew nuts, raisins)
coriander leaves to garnish
For Frying
Oil for deep frying
To make the filling
Chop the boiled potatoes. Heat the oil.
Add fennel seeds.
When they start to crackle add green chilies and ginger.
Now add potatoes, nuts, and all the spices.
Let it cook for 2 minutes. Switch off the heat and add fresh coriander leaves.
Cool the mixture before filling in the bread rolls.
To make Bread Rolls
Soak the bread slices in a bowl for 30 seconds.
Squeeze out extra water by pressing a slice in your palms.
Put a spoon of potato mixture on the slice.
Gently shape into a roll with your hands.
Heat oil and deep fry the rolls on medium flame till golden brown.
Serve Potato stuffed bread roll hot with sauce or mint chutney.

Thanks Sayema. Do not cover these when these are hot. And you have to drain water completely from the slices before making them to get crisp roll. Hopefully this will help 🙂

we have to soak bread to give it desired shape. After soaking bread we press it between our palms to remove excess water. Without this step we will not b able to give it round shape. As we remove excess water it does not soak much oil while frying. I hope I have cleared your doubt if not please feel free to ask me.

For filling you can use boiled carrots, corn or peas with potatoes. can also add grated cheddar cheese.
