Pineapple salsa Canapes - yummy, easy to make, no cooking required, snack
Pineapple salsa Canapes are pretty shaped pieces of bread or biscuits which are topped with cheese and toppings of your choice. ‘Canape’ is French for ‘couch’ and is generally served as an appetizer. Canapes make a great snack and can be prepared in 10 minutes. These are definitely a hit in kids party as they hardly take any time to make and are very healthy.

My son who is never hungry at lunch time or dinner time is always hungry – “dying of hunger” (in his own words) at 5’o clock in the evening. Canapes are the safest bet to prepare at such times. All you need is some crackers and cheese spread. If you don’t have crackers you can use pieces of bread or even cucumber or tomato as a base. There are no rules regarding Canapes and you can go creative with them and make toppings of your choice. You can also prepare toppings in advance and assemble them at the last minute.

This time I prepared Pineapple salsa Canapes as I already had an opened can of pineapple and was thinking of ways to finish it. The result was amazing. The combination of pineapple, lemon and cheese is very unique. It was sweet ..and salty..and sour .(yeah I know, I am also drooling).
There is another plus point in making canapés. With kids exams around the corner, we desperate mothers can always use these as a reward for studying 😉

How to make Pineapple salsa Canapes

Preparation time: 10 minutes
Cooking time: no cooking required
makes 10 pieces

Ingredients:

For Pineapple salsa Canapes
10 crackers ( I’ve used Britannia crackers)
mayonnaise or cheese spread
pineapple salsa

For pineapple salsa
4-5 pineapple rings roughly chopped ( I used canned pineapple but you can also use ripe fresh pineapple)
1 onion chopped
1 tomato chopped
½  capsicum diced
1 tbsp olive oil
1 tbsp lemon juice
salt and pepper to taste
chopped coriander leaves or cilantro
¼ tsp chaat masala (optional)

Mix all the ingredients together. It will have a very special sweet and sour taste because of the combination of sweet pineapple and lemon. Mix in chopped coriander leaves.

These are really super easy to make. Just spread evenly mayonnaise or cheese spread on crackers. Top with pineapple salsa.

Enjoy……
