Eggless Chocolate MuffinEggless Chocolate Muffins. My kid’s new love:-) The best moist and spongy eggless muffins for a quick snack or something sweet.

Eggless Chocolate Muffin
There is something about Muffins that kids absolutely love. I have used the same recipe that I use for the eggless chocolate cake. I baked a cake and some muffins. The verdict is out both my kids loved the muffins more than cake. Could be because they like having their own separate muffin rather than sharing a cake.

When I asked my younger son how he liked it he said I give you 200 out of 10. Well what more could a mother ask for 🙂
Eggless Chocolate Muffin

The beautiful server is a gift from my sister. Isn’t it pretty? I just love it.

How to make Eggless Chocolate Muffins
preparation time: 5 minutes
Baking time: 20 minutes at 180 C
Makes around 6 muffins
Ingredients:
¾ cup plain flour/maida
2 tbsp milk powder
2 tbsp cocoa
1 tsp baking powder

¼ cup fresh cream/malai from milk
½ cup powdered sugar
6-7 drops vanilla essence
½ cup milk

To make Eggless Chocolate Muffins

Preheat the oven for 10-15 minutes at 180C.

Sieve flour and baking powder. Add milk powder and cocoa to it.
In a separate bowl, mix sugar and cream till fluffy. Add vanilla essence to it.

Now add flour mixture to sugar and cream mixture gradually till all of it is used. Keep on mixing and folding in between. Add a little milk at a time to get the desired consistency.
Taste the batter and adjust sugar according to your taste. Beat well for some time. The mixture will be fluffy now.

Immediately pour into the greased muffin tin and bake for 15-20 minutes at 180 C. You can use muffin liners/paper cups also. Easy to handle and kids love them.

Fill only 2/3rd cup so that there is room to rise.

Tap the muffin tray gently on the slab to level the batter.
I have baked for 20 minutes.
Check by inserting a knife/toothpick whether the muffin is uniformly baked or not especially at the center of the muffin. If it is not done then bake for another 5 minutes.

Leave the muffins in the oven for some time
Take it out of the oven and let the muffins cool for some time and then ENJOY 🙂
